Elvi Adar de ELVIwines Cava NV
This Spanish sparkling wine was fermented in the bottle for 12 months in the traditional champagne manner — in other words, this is a champagne but as usual can't legally be described as a champagne due to various rules and regulations. The grapes were Macabeo 30%, Xarel·lo 40%, Parellada 30% according to the web site. (The name of the wine, by the way, really is written in that odd mixed-cased.)
This champagne was dry, as advertised ("Brut") and very light on the palate; but on the other hand I didn't detect any particular flavor or even the intensity I associate with better champagnes. In other words, I found the wine somewhat ordinary, suitable for everyday drinking or for people who prefer a less intense wine.
