Cabernet-Merlot 1998

This wine simply had too much tanin and was hard to drink right out of the bottle. Air didn't seem to help; I put the bottle aside for a week, testing it every day, and after a week it was finally calm enough to sip. This is actually a good sign for a wine with lots of depth; it means it can develop and mature for a few years.

The wine is Estate Bottled in oak for two years. The Cabernet-Merlot mix is the same as goes into Bordeaux wines.

I will almost certainly revisit this wine from time to time to see how it progresses.
